Beer Can Chicken With Fresh Herbs
Roasting a whole chicken is an incredibly economical way to serve dinner. There are enough parts to please everyone – whether your family likes the legs, breast or thighs, they are all there and roasting the chicken over a can of beer produces the most tender, flavorful chicken you can imagine!
Yes the chicken looks rather ridiculous on its beer can perch, covered with an herb rub, but while the chicken is dry roasting on the outside, the inside is being steamed in a bath of beer, keeping the chicken meat incredibly moist.
The result is tender, falling-off-the-bone meat, encased in salty, herby, crispy skin.
Simply use butter (or olive oil), salt, pepper, and any combination of fresh herbs you have on hand like parsley, rosemary, thyme, marjoram or oregano on the chicken, which brings out the best in the chicken’s flavor. You can easily experiment with your favorite spice rub as well.

Beer Can Chicken Recipe
Ingredients:
Directions:
1. Preheat grill to medium (375º-425º). In a small bowl, combine butter with herbs, salt and pepper to form a paste. Rinse and pat chicken dry.
2. Take one-third of the herb paste and rub on the inside of the chicken. Slightly stretch skin, being careful not to tear, and rub one-third of the herb paste between the skin and flesh of the breasts, thighs and legs. The remaining herb paste should be rubbed on the exterior of the chicken.
3. Open beer and pour out 1/3 of the beer. Place cavity of the chicken on the beer can and sit chicken in an 8 x 8 aluminum foil pan to catch drippings.
4. Turn off center burner(s) on grill. Place chicken over indirect heat in the center of the grill and cook for about 1 hour and 15 minutes, until internal temperature of 165º is reached in the thickest part of the breast, or 180º in the thigh. Remove from grill, tent loosely with aluminum foil and let rest 10 minutes before serving.

- 1/4 cup minced fresh herbs any combination of parsley, rosemary, marjoram, oregano, or thyme
- 1 Tbs kosher salt
- 1 tsp black pepper
- 1 - 4 to 5 pound chicken
- 1 can beer
