Chewy Chocolate Chip Oatmeal Cookies 

These healthy and delicious chocolate chip oatmeal cookies are made with four simple ingredients – oats, cinnamon, chocolate chips and mashed bananas.  

Are you doing any stress baking while sheltering in place?  I sure have as have my children.  Every day they want to bake cookies, make nice cream, bread, and muffins!  So much that we are out of flour, which is a problem because flour seems to be in short supply these days!

Luckily these 4 ingredient chocolate chip oatmeal cookies don’t need flour and they come together in under 20 minutes using pantry staples.  They are not true “cookies” because they don’t have butter or sugar, but they are super chewy and delicious!

Oats have a ton of fiber, bananas are full of potassium, cinnamon is good for lowering blood sugar and chocolate chips are packed with antioxidants.  See, healthy!

Take advantage of the hot sale on bananas at Safeway – 3 lbs. for $1.00 and you can also use instant oats – the plain instant oats would be best – those are on sale for $1.49 a 10 pack box at Safeway through April 28th.

 

Ingredients

  • 2 ripe bananas
  • 1 cup oats
  • 1 teaspoon ground cinnamon
  • 1/4 cup chocolate chips

How to Make Healthy Chocolate Chip Oatmeal Cookies

Preheat the oven to 350 degrees F.  Spray a non-stick baking sheet with cooking spray.

Smash the bananas in a medium bowl with a fork until fully mashed.

Combine oats, mashed bananas, ground cinnamon, and chocolate chips and mix until combined.

Using a cookie dough scoop, or a tablespoon to scoop out the mixture onto your baking sheet.

Bake for 15- 18 minutes until the cookies are slightly golden brown.  Makes 12 cookies.
