Chipotle Grilled Fish Tacos
Fish tacos are an easy and economical meal that everyone loves. Â Use any white fish to make fish tacos. Â Take advantage of the hot sale on tilapia – $1.99/lb Friday only, or $3.99/lb through 4/18 at Safeway right now and make these on the cheap! Â Combine honey, lime juice and chipotle chili powder with olive oil to make a marinade and sauce and then grill the fish over foil on a medium-hot grill. Â Serve with shredded cabbage, avocado and fresh lime juice. Â Delicious!
Chipotle Grilled Fish Tacos

Directions
1. Preheat grill to medium-high (450º-475º). In a medium mixing bowl, add honey, lime zest and juice, olive oil, chipotle chili powder, salt and pepper. Whisk to combine ingredients. Add cod to marinade and let soak for 15 minutes.
2. Using 2 sheets of heavy-duty aluminum foil (about 14″ x 14″ in size), fold the edges of each side to create a tray.
3. Place aluminum foil tray on grill, then add cod fillets. Grill for 3 minutes, then flip and grill for additional 3 minutes. Cod is done when pieces flake easily. Tortillas may be warmed on grill for about 1 minute, if desired.
4. To assemble tacos, add 2 ounces cod to one tortilla. Top with avocado and cabbage.
