Crockpot Beef Stroganoff Recipe

Beef Stroganoff is the ultimate comfort food where tender strips or chunks of beef and mushrooms are cooked together in a creamy sour cream sauce and then served over noodles or rice.

Making Beef Stroganoff is really easy especially when you use the crockpot to simply combine the ingredients and let the slow cooker do the work.

My husband makes a version of this stroganoff with ground chuck and eats it over baked potatoes.  It’s his favorite meal, but my kids prefer this over noodles rater than potatoes any day.  

I chop the mushrooms really small because my kids have something against large pieces of mushroom, and when they are small they don’t notice them in the dish, but you still get the incredible creamy umami flavor.

How to Make Beef Stroganoff:

1. To a crockpot, add onion, mushrooms, beef, garlic, thyme, salt, pepper, and wine. Cook on low for 6-8 hours.

2. Stir the beef mixture and remove 1/4 cup broth. Whisk flour into the broth and stir into the crockpot. Turn crockpot temperature to high and cook for 10-15 minutes.

3. Add sour cream and mix well. Serve over egg noodles or rice, if desired.

Ingredients

  • 2 1/2 lbs beef chuck roast cut into 1 inch cubes
  • 1/2 cup dry red wine broth can be substituted for the wine
  • 1 1/2 cups sour cream
  • 1 lb mushrooms cut in half
  • 1 large onion diced
  • 5 cloves garlic minced
  • 3 Tbs all-purpose flour
  • 1 tsp dried thyme
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  • Optional
  • egg noodles or rice
  • fresh parsley

Instructions
