Goat Cheese Cherry Bruschetta With Honey and Basil
Bruschetta and summer go hand in hand, as do cherries and summer! It’s only natural that a Cherry Bruschetta should make an appearance on your summer table!
Here are two different recipes of cherry bruschetta that you can make. The goat cheese cherry bruschetta has a delicious salty and sweet combination, whereas the lemon ricotta cherry bruschetta is lighter, tangier, and slightly sweeter with the addition of honey mixed with the ricotta.
A perfect appetizer for your family, or for entertaining, cherry bruschetta is easy to make and since fresh cherries are used, you can only make this in the summer when cherries are in season.
Ingredients in Cherry Bruschetta
fresh sweet cherries
1/2 Rustic French baguette
1 tablespoon extra virgin olive oil
clove of garlic
goat cheese
basil
honey
Lemon Ricotta Cherry Bruschetta With Mint & Honey
fresh sweet cherries
French baguette
clove of garlic
ricotta cheese
honey
lemon zest
mint
The preparation of the bruschetta is the same regardless of the ingredients used.
You’ll slice the bread in half lengthwise, drizzle with extra virgin olive oil, and grill for a few minutes over a pre-heated low to medium heat grill (to get the baguette perfectly toasted. You can also use the broiler.
Then, you’ll rub a clove of garlic over the baguette as the first layer of flavor.
If using the lemon ricotta honey mixture – you’ll mix together 4 oz of ricotta cheese with 2 tablespoons of honey.
Spread the cheese over the toasted bread.
Top with the quartered cherries
Garnish with mint or basil and a drizzle of honey.
Cut into 2-inch pieces and serve.
It’s best eaten right away because otherwise, the cheese and cherry juices soak into the bread making it chewy.

- 2 cups fresh sweet cherries

- 2 oz goat cheese
- 4-5 basil leaves thinly sliced
- 1 tablespoon honey
Lemon Ricotta Cherry Bruschetta
- 2 cups fresh sweet cherries
- 1/2 rustic French baguette
- 1 tablespoon extra virgin olive oil
- 1 clove garlic
- 4 oz ricotta cheese
- 3 tablespoons honey divided
- 4-5 fresh mint leaves thinly sliced
Instructions

- While the bread is toasting, prepare the cherries.
- Wash, pit and quarter the cherries. Place in a bowl and set aside.
- Once the baguette is toasted, remove from the grill and rub a clove of garlic over the baguette as the first layer of flavor.
- If using the lemon ricotta honey mixture - you'll mix together 4 oz of ricotta cheese with 2 tablespoons of honey.
- Spread the cheese over the toasted bread.
- Top with the quartered cherries
- Garnish with mint or basil and a drizzle of honey.
- Cut into 2-inch pieces and serve.
