Grilled Pesto Chicken
Wondering what to make with what’s on sale at Safeway this week? This grilled pesto chicken with balsamic cherry tomatoes was a huge hit at my house and the recipe could not be any simpler!
While I have made my own pesto and like to do so, two of my basil plants took a beating from the hail last week, so I need to give it some time to regenerate and grow.
Ingredients
How to Make Grilled Pesto Chicken
Over medium-high heat, grill the chicken for about 7 minutes on each side.
In the meantime, chop the cherry tomatoes, which are on sale for buy one get one free this week, and julienne the fresh basil.
Pour the tomatoes and basil into a bowl and add olive oil, white balsamic vinegar, salt, and pepper and let the cherries soak up all the balsamic flavor before you add to the chicken.
When the chicken is cooked through, top with the balsamic cherry tomatoes and fresh basil and serve.
I chose a white balsamic vinegar because you get all the delicious balsamic flavor and your basil and tomatoes stay fresh and bright rather than turning a dark color.
I served with a fresh Greek potato salad, but you could also serve with a simple pesto pasta dish or a light salad if you are skipping the carbs.
