Black Bean & Corn Salsa Appetizer

Holiday entertaining is easy when you have a game plan in place.  Every December we like to have friends and family over to celebrate the season and I like to keep it simple with a few basic appetizers and a main course that everyone seems to love.  There is no need to break the bank to throw a great holiday party.  Create a simple menu full of filling foods that you prepare ahead of time so you can enjoy the party with your guests.

My party menu typically consists of a black bean and corn salsa served with colorful chips, a pomegranate jewel cheese-ball, holiday meatballs in the crockpot, a veggie platter, and homemade enchiladas.

Whip up a giant batch of Black Bean & Corn Salsa in minutes! It’s fresh and delicious, perfect for parties, so easy to make, and addictive!  The black bean & corn salsa is quite unexpected in flavor because I use apple cider vinegar and a little sugar in the salsa recipe.   It’s a unique combination with the heat of the jalapeno, the saltiness of the feta and the sweetness of the cider vinegar and sugar.   It’s actually quite refreshing, and perfect to serve for the holidays because it’s colorful and full of flavor.  Because the main star of the recipe is beans and corn, this is a budget friendly recipe as well.

I used Kuner’s Black Beans and Kuner’s Corn for this recipe.  Kuner’s canned beans and veggies are on sale for just $.50 each at Safeway this month through December 25th.

Black Bean & Corn Salsa

Ingredients:

  • 1 can of Kuner’s Black Beans
  • 1 can of Kuner’s Corn
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 pint of cherry tomatoes, halved
  • 1 tbsp fresh cilantro, chopped
  • 1/2 cup green onions, chopped (about 5 green onions)
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup white sugar
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

Drain and rinse the corn and beans and pour into a medium size bowl.  Remove the ribs and seeds from the jalapeno, slice then finely chop into small pieces.  Cut the cherry tomatoes in half.  Combine the beans, corn, jalapeno, tomatoes, onions, cilantro and feta cheese.  In a separate bowl, combine the sugar, olive oil, vinegar, garlic powder, salt and pepper and stir to mix well.  Pour the “dressing” over the beans and veggies and stir just to combine.  Don’t over stir as you will break up the beans and you want to keep them whole.

Serve immediately, or if you refrigerate for a few hours, the flavors will have a chance to absorb the delicious dressing and become even more flavorful as it rests.  Gently stir before serving.

Serve with tortilla chips.  You can also serve with chopped avocado with lime juice piled on top of the salsa as I showed in the picture above.
