Mediterranean Pasta With Shrimp

Ingredients in Mediterranean Pasta with Shrimp

  • 1 lb. shrimp, peeled and deveined
  • 8 oz Signature SELECT Whole Wheat Pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • salt and pepper to taste
  • pinch red pepper flakes
  • dried oregano
  • lemon zest and juice
  • 1.5 cups Signature Farms Wild Wonders Medley grape tomatoes
  • 1/2 red onion, sliced
  • 2-3 sprigs of fresh thyme
  • 1 tablespoon fresh oregano, chopped
  • 1/2 cup white wine
  • 1 cup Kalamata olives, halved
  • 2 cups fresh O Organics spinach, roughly chopped
  • 1/4 cup Primo Taglio feta cheese, crumbled
  • fresh parsley chopped for garnish

How to Make Mediterranean Shrimp Pasta

Cook the pasta according to package directions, reserving 1 cup of pasta water before draining. 

In a large skillet, heat 1 tablespoon olive oil. Add garlic and sauté until fragrant, about 1 minute. Add the shrimp, and season with salt, pepper, dried oregano, red pepper flakes and zest and juice of one lemon.  Cook the shrimp for 2-3 minutes on each side until cooked through, then remove the shrimp from the skillet. 

Add 1 tablespoon olive oil to the skillet and add the tomatoes and red onion.  Season with salt and pepper and add thyme and chopped oregano.  Saute until the tomatoes burst and the red onion softens for about 8 minutes.   

Add the white wine and Kalamata olives and cook until it reduces by half – about 2-3 minutes.  Then add the cup of the reserved pasta water and stir to incorporate.  Add the spinach and shrimp back to the pan and toss until the spinach is wilted. 

Toss the shrimp, tomatoes and sauce with the pasta and add crumbled feta.  Garnish with fresh parsley.

    1. Thank you Alyse. Yes, I think it would taste great with broccoli. I would chop the florets small and add them at the same time as the tomatoes and onions so that it cooks properly. The recipe is very flexible so you could also add artichokes, asparagus, peppers, green beans, whatever you have on hand! I hope you try and please let me know how you like it! Eva
