Ham and Cheese Mini Quiche Biscuits

Take your two favorite coffee shop pastries, bake them together, and you get these savory ham and cheese quiche biscuits. They are beautiful enough for brunch, but easy to eat on the go, too.

Take advantage of a hot sale on Signature SELECT refrigerated biscuit dough and make these savory ham and cheese mini quiche biscuits for breakfast or brunch.  Super easy to make and delicious, it’s a great way to use up a can of biscuit dough.

These biscuit quiches are a perfect make-ahead breakfast option for busy mornings as the kids are getting ready to go back to school.  Reheat in the microwave for 45 seconds or in an air-fryer for 1-2 minutes. 

Ingredients in Biscuit Quiches

  • 1 can (16.3 oz) refrigerated Signature SELECT Jumbo Buttermilk Biscuits (8 Count)
  • 3 eggs
  • 3/4 cup shredded Swiss cheese
  • 2/3 cup baby spinach
  • 2/3 cup diced ham
  • 2 tablespoons Lucerne cream or half and half
  • 1/2 teaspoon salt
  • 1/3 teaspoon pepper

How to Make Mini Quiche Biscuits

Preheat oven to 400°F. Line a large baking sheet with parchment paper.

Arrange the biscuits on a baking sheet. Press the bottom of a 2 1/2” cup into the center of each biscuit, creating a “nest.” Mold dough around the glass as needed to create a deep indentation surrounded by even edges.
 
It’s important that the indentation is deep so that the egg mixture doesn’t spill out over the sides. 
 
In a large bowl, stir together eggs, cheese, spinach, ham, cream, salt, and pepper.
 
Spoon the egg mixture into the center of each biscuit.

Bake for 20-23 minutes, until the center, is set and the biscuits are golden brown around the edges. Allow the quiches to cool slightly before serving.
