One-Pot Penne Pasta and Ground Beef Meal
This One-Pot Penne recipe works great as a first course in small bowls or with heartier portions for a full meal. Just add penne pasta to sautéed onions, ground beef, tomatoes, beans and broth and voila! For extra flair, top with avocado, chopped tomatoes and shredded cheese.
It’s the ultimate fusion meal combining zesty salsa, beans and ground beef with pasta.
- 1 large sweet onion (diced)
- 1 lb lean ground beef
- 1 teaspoon kosher salt
- 1 (14-ounce) can diced tomatoes (not drained)
- 2 cups chicken broth
- 1 cup salsa
- 12 ounces penne pasta
- 1 (15 ounce) can pinto beans
- hearts of romaine lettuce (chopped)
- diced avocado
- chopped tomatoes
- shredded cheese
How to Make One Pot Penne Pasta Bake
In a large pot sprayed with nonstick cooking spray, sauté onion on medium heat for 7 minutes, until the onion is translucent and starts to brown along the edges.
Add ground beef and salt, breaking up the ground beef into chunks with a wooden spoon. Sauté beef for 3 minutes, then add diced tomatoes, broth and salsa.
Turn heat to high while stirring to get ingredients to boil. Add penne and reduce heat to let pasta simmer while stirring occasionally, about 10-12 minutes, or until penne is fully cooked.
During the last minute, stir in pinto beans. Remove from heat, stir and serve in bowls, add toppings as desired.
