In honor of National Peach month I am sharing my favorite peach galette recipe with you!  It’s not a traditional pie, as I prefer a rustic galette to a formal peach pie any day and it takes half the time to put together!  We are so lucky to live in Colorado and get amazing fresh, ripe Palisade peaches in August.  This is the perfect time to try a new recipe – especially with the super low sale price of $.97 per lb. at Safeway – you can make several galettes!

I experimented with 2 recipes today because I had so many peaches – I made one with the peach peel and one without the peel.  I have to say I prefer the peach peel on because it makes the galette more interesting and you get all the added fiber from the peel.   Let me know in the comments below how you prefer your peach galette.  You can also add some fresh blueberries if you like to give the galette more color!

While you can make your own crust, I am not particularly picky about crusts and find that the store-bought pie crust works great for this dish.  If I were to make a homemade crust for this – I would absolutely use the Lemon Blueberry Galette Crust recipe.  It’s to die for!

This is amazing served with a scoop of vanilla ice cream!

Ingredients:

  • 1 store bought refrigerated pie crust
  • 2 large peaches, sliced into wedges 1/4 inch thick
  • 3 Tbsp granulated sugar
  • 1 Tbsp flour
  • 1/2 tsp ground cinnamon
  • 1 Tbsp cold butter, cut into small pieces
  • 1/2 tsp vanilla extract
  • 1 tsp raw sugar for sprinkling
  • 1 egg, beaten for egg wash

Directions:

1. Preheat oven to 425 degrees

2. In a large bowl, toss the sliced peaches with the flour, vanilla extract, cinnamon and granulated sugar until well coated

3.  Cover baking sheet with parchment paper and place the pie crust in the middle.  Arrange peach slices in a overlapping pattern in a single layer in the middle of the pie crust forming a 8 inch circle, leaving about 2 inches of pie crust to fold in over the peaches.  Dot the peaches with the cubed butter.

4.  Fold the dough edges over the filling in an accordian fashion and brush the dough with beaten egg wash.  Sprinkle raw sugar over the crust and filling

5.  Bake at 425 degrees for about 20 minutes until nicely browned.  Remove from the oven and let it cool for about 15 minutes.

Serve with vanilla ice cream
