Lemon Blueberry Galette Recipe

Blueberry galettes are the perfect dessert to make when you have extra blueberries on hand.  A galette is a French pastry similar to a tart or a pie; it’s essentially pastry dough wrapped over a filling made from fruit, sugar, and butter.

The perfect dessert for any stress baking you want to do during this time!

I always like to prepare stone fruit galettes, in the summer like my peach galette and I even mix peaches, plums, and blueberries to make a mixed fruit galettes when I have extra ripe fruit on hand.

Lemon Blueberry Galettes are delicious and allow you to take advantage of the fresh in-season blueberries that are on sale at Safeway.

The crust is really easy to make, you simply combine sliced almonds, oats, flour, sugar, butter, and vodka in a food processor until you get a coarse meal then you want to form the dough into a ball and chill for up to 2 hours before rolling out the dough.

This will help it roll out evenly and fold over the berries.  The filling is as simple as it gets as well with blueberries, sugar, and lemon.

You could always mix other stone fruits or berries if you want to mix it up!  I always serve my galettes with a dollop of vanilla ice cream.

Lemon Blueberry Galette Recipe

Ingredients:

Crust

  • 1/2 cup quick oats
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 2 Tbs sugar
  • 1/2 cup (1 stick) cold unsalted butter, cut into 1/2 inch cubes
  • 2 Tbsp ice cold Vodka
  • 2-3 Tbs ice cold water

Filling

  • 4 cups blueberries
  • 1 Tbs all-purpose flour
  • 1/4 tsp kosher salt
  • 1/2 cup sugar
  • 1 Tbs lemon zest

How to Make a Galette

1. In a food processor, combine almonds, oats, flour, salt, and sugar; pulse 2 times. Add butter and pulse 2 more times. Add vodka through the top pour section while pulsing 2 more times. Add water through the top pour section and pulse 1-2 times. The dough should be in coarse pieces. Wrap dough with plastic wrap and shape into a round disk. Let chill for 1-2 hours.

2. Preheat oven to 350º. Between 2 sheets of parchment paper roll crust into a 14-inch round. Transfer parchment to a baking sheet, and remove the top piece of parchment. In a mixing bowl combine filling ingredients and place in the center of the dough, leaving 2 inches around the edge. Fold up the sides.

3. Bake for 45-55 minutes, until crust is golden and filling is bubbly. Let cool. Serve slightly warm or at room temperature
