Philly Cheesesteak Stir Fry

A classic Philly Cheesesteak sandwich comes from the combination of thinly sliced beef, sauteed peppers and onions and lots of melted cheese on a big sandwich roll.  Skip the bun and lighten up this hearty meal and add some fiber with the addition of whole-grain brown rice.

This is a perfect way to use up a beef roast that you’ve made in the crockpot or oven.  Simply saute the onions and peppers until caramelized, then mix with the prepared beef roast.  Serve over hot brown rice topped with melted provolone cheese and you’ll still get the meaty, gooey, and delightfully non-messy version of the Philly Cheesesteak that you can make any time you have leftover beef from a roast.

This is a great meal prepping recipe as well – simply add brown rice to a glass container, top with provolone cheese and the beef and veggies.  Reheat for lunch the next day and the next day after that!

Ingredients

  • 1 large sweet onion
  • 1 large green bell pepper
  • 16 oz cooked & shredded beef roast
  • 4 slices Provolone cheese
  • 1 cup Long Grain Brown Rice
  • 1/2 tsp kosher salt

Instructions

  • 1. Cook brown rice according to package directions. Set aside.
  • 2. Spray a medium skillet with non-stick cooking spray and heat to medium. Sauté onion until translucent, about 3-5 minutes. Add bell pepper & salt, sautéing until onions are lightly caramelized, about another 10 minutes. If needed, add in a splash of water or beef broth if pan gets too brown. Scrape up brown bits on the bottom of the pan as you add any liquid. Add beef to the skillet & sauté just until hot.
  • 3. To serve, scoop rice, then layer a slice of cheese over rice, then a portion of sautéed onion, bell pepper and beef on top. Serve hot!
