Pork Medallions with Creamy Mushroom Herb Sauce Recipe

Tender pork simmering in a creamy and flavorful mushroom herb sauce makes this a weeknight meal to savor.

Pork is a perfect meat option to prepare every night of the week.  You can have a meal on the table in under 30 minutes when you use pre-marinated pork products.  I partnered with Smithfield® to create a recipe using their marinated fresh pork.

Smithfield makes several marinated fresh pork flavors available at Safeway including Steakhouse Mushroom, Roasted Garlic & Cracked Black Pepper, Applewood Smoked Bacon, Garlic and Herb, and Sweet Teriyaki.

Smithfield Marinated Fresh Pork loin filets and tenderloins are convenient to get dinner on the table in 30 minutes or less, giving you real flavor, real fast!  You can always grill, sauté or roast the whole pork loin as is, but I like to add a little flair with a creamy sauce, so I sliced it into medallions to cook it more quickly and add even more flavor.  I used the Smithfield Steakhouse Mushroom Pork Loin Filet in this recipe but you can choose any flavor!

The recipe I created calls for fresh herbs like basil, oregano, and parsley mixed with wine, mushrooms, carrots, and beef broth.  I used the Safeway Garlic and Roasted Onion Infused Broth to give a bit more flavor to the sauce.  Regular beef broth can always be used if you prefer.

How to Make Pork Medallions in Creamy Herb Sauce

Creating this dish is incredibly easy, first chop all the ingredients and slice the pork loin filet.

Heat the pan and add the oil.  Sauté the carrots until soft then add the pork and cook for about 5 min each side.

Remove the pork from the pan to create the sauce.

Add the shallots, mushrooms and fresh herbs to the pan followed by the broth, wine, and cream to create a delicious sauce for the marinated pork.

Add the pork back to the pan, along with the juices, and simmer for about 10 – 15 minutes to let the sauce thicken and flavor the pork.

Stir the pork while simmering to incorporate all the delicious flavors of the sauce.

Serve with roasted potatoes or any starch of your choosing.  It’s the perfect dinner option any night of the week.

Pork Medallions with Creamy Mushroom Herb Sauce Recipe

Serves 4- 6

Ingredients

  • 1 tablespoon olive oil
  • 1 cup minced carrots
  • 1 1/2 pounds Smithfield Marinated Steakhouse Mushroom Pork Loin Filet sliced into 1/4″ medallions
  • 2 teaspoons all-purpose flour
  • 1 tablespoon fresh basil
  • 1 tablespoon fresh oregano
  • 1 large shallot
  • 1 tablespoon fresh parsley
  • 1/2 teaspoon ground black pepper
  • 1/2 cup beef broth
  • 2/3 cup heavy cream
  • 1/4 cup dry white wine
  • Salt and pepper to taste

Directions

  1. Chop all vegetables and herbs and slice Smithfield Marinated Steakhouse Mushroom Pork Loin Filet
  2. Heat oil in a skillet over medium heat; cook carrots in oil for 5 minutes, stirring often. Add pork, salt and pepper and cook until lightly browned about 4 – 5 minutes on each side. Remove pork from the pan, and keep warm by placing on a plate and tenting with foil.
  3. In the skillet, add the shallots and mushrooms, cook for 1 minute.  Then add flour, basil, parsley, oregano, wine, and broth.  Add the cream, stirring until thick.  Return pork to pan, reduce heat to low, and cover. Simmer for 15 minutes, stirring occasionally.
  4. Serve with roasted red potatoes.
