Banana Cream Pie Pops

We are all for sneaking healthy ingredients into desserts! Your kids will be none the wiser when they taste these frozen banana cream pie treats. Wheat germ, bananas, cashews and coconut oil bring the nutrition while honey and a little sugar bring the sweetness.

So this original recipe is from Safeway – but if you don’t have wheat germ on hand, you can crush some graham crackers to mix with the sugar and coconut oil as the base for the popsicles.

Ingredients

  • 2 ripe bananas (plus 1 banana for slicing)
  • 1/4 cup raw cashews
  • 1/2 cup unsweetened cashew milk (can substitute cow’s milk, almond milk or coconut milk)
  • 3 tablespoons raw honey
  • 2 tablespoons fresh lemon juice (plus 1 teaspoon to brush on banana slices)
  • 1/2 cup wheat germ
  • 1 tablespoon raw sugar
  • 1 tablespoon coconut oil (melted)

How to Make Banana Cream Pie Pops

Soak cashews in cashew milk for about 10-15 minutes.

In a food processor or blender, puree 2 bananas, cashews, cashew milk, honey and lemon juice until smooth.

In a small bowl stir wheat germ, sugar, and coconut oil until well combined.

Pour banana mixture into popsicle molds and add banana slices brushed with lemon juice; this prevents browning.

Top with wheat germ mixture. Freeze 3-4 hours before serving.
