Red White and Blue Salads
Jazz up your summer patriotic celebrations with a red, white, and blue salad. Here we are featuring a tomato, blueberry Caprese salad with basil and a watermelon blueberry feta salad with mint. Both are completely unique and delicious!
Take advantage of sales at Safeway on watermelon and blueberries to make these salads for your Memorial Day celebration. Also perfect for the 4th of July or Labor Day, or anytime you want a fun summer salad that is easy to make and refreshing!
Tomato, Blueberry Caprese Salad
Ingredients
- 1-pint grape tomatoes halved
- 1 cup blueberries
- 8 oz fresh mozzarella pearls
- 2 tablespoons basil, thinly sliced
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- salt and pepper to taste
Combine the tomatoes, blueberries, mozzarella cheese in a serving bowl and toss to mix. Top with thinly sliced basil
In a small jar or bowl, combine the balsamic vinegar, olive oil, honey and salt and pepper. Stir or shake to combine.
The salad can be made ahead of time and refrigerated, however, add the dressing just before serving to keep the cheese white!
Watermelon Blueberry Feta Salad
Sweet watermelon and blueberries combined with salty feta, and fresh mint make a match made in heaven in this watermelon blueberry feta salad!
Ingredients
- 2 cups watermelon, cubed
- 1 cup blueberries
- 2 tablespoons mint leaves
- 1/4 cup feta cheese crumbled
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon rice wine vinegar
- salt and pepper to taste
Combine the watermelon cubes, blueberries, feta cheese in a medium bowl. Toss to incorporate.
In a small mason jar or bowl, combine the olive oil, rice wine vinegar, honey, salt and pepper. Stir or shake to mix.
The salad can be made ahead of time and refrigerated. Add the dressing just before serving.
