Roasted Sweet Potatoes with Pecan Crunch

With Thanksgiving just four days away, I thought I would share an amazing roasted sweet potato recipe as everyone is planning their Turkey Day menus.  This is an easy and delicious twist on a sweet potato casserole has orange juice and dried cranberries along with ginger and a pecan crumble as the topping.  This roasted sweet potato dish is a sweet addition to any turkey and ham meal.

All of the ingredients for this meal are on sale at Safeway this week.  $.99/lb sweet potatoes, $1.50 Safeway brown sugar, $1.50 Simply Orange Juice with coupon, McCormick Spices 33% off, Paradise Meadow dried cranberries on sale for $1.50, Lucerne Butter $1.99, Diamond of California Pecans 8 oz on sale for $6.99.

Ingredients:

• 3/4 cup brown sugar
• 2 Tbs orange juice
• 2 tsp Pure Vanilla Extract
• 1 1/2 tsp Cinnamon
• 1 1/2 tsp Ginger
• 1/2 tsp salt
• 3 lbs sweet potatoes, peeled and chopped into 1 1/2 inch cubes
• 1 cup cranberries
• 6 Tbs butter
• 1/2 cup flour
• 1 cup pecans

Directions

Preheat oven to 400°F. Mix 1/4 cup of the brown sugar, orange juice, vanilla, 1/2 teaspoon each of the cinnamon and ginger, and salt in large bowl. Add sweet potatoes; toss to coat well. Spoon into 13×9-inch baking dish. Sprinkle evenly with cranberries. Dot with 2 tablespoons of the butter. Cover with foil. Bake 30 minutes.

Meanwhile, mix flour, remaining 1/2 cup brown sugar and remaining 1 teaspoon each cinnamon and ginger in medium bowl. Cut in remaining 4 tablespoons butter with a fork until coarse crumbs form. Stir in pecans. Remove sweet potatoes from oven and stir gently. Sprinkle evenly with pecan topping.

Bake, uncovered, 25 to 30 minutes longer or until sweet potatoes are tender and topping is lightly browned.
