Maple Glazed Pork Tenderloin
Looking for an elegant, yet simple entree to prepare this holiday season? This Maple Glazed Pork Tenderloin is not only pleasing to the eyes – it’s amazing for the palate as well! You mix dried cranberries and apricots with a herbed cheese as the filling, roll the pork and then baste with a maple syrup glaze at the end of baking. I actually prepared this last night for our out of town guests using a pork loin that I had the Safeway butcher butterfly for me. It was super simple and received lots of praise at the table. Pork is one one of those meats that take on the flavor of the seasonings and fillings. In this case, you get a sweet and savory flavor with every bite.
