Safeway Weekly Meal Plan & Meal DealsBefore the sale cycle ends, I wanted to share with you a couple of weekly meal plan ideas you can use to take advantage of these awesome sales on meat this week.

I always like to plan my meals around the protein that is on sale.  This week, we have chicken breasts for $1.69/lb.  Chicken Leg Quarters for $.69/lb., Country style ribs for $1.88/lb., Pork Chops for $1.88/lb.  and 93% Lean Ground beef for $3.98/lb.  Additionally, you can pick up frozen Alaskan cod for $3.99/lb. or Steelhead fillets for $4.88 each.  These are all stock up prices on meat and seafood that you have to take advantage of before the sale ends tonight 10/6.

Of course with the taco shells, refried beans, chicken, ground beef and salsa at such low prices it only makes sense that you would have a Mexican themed dinner this week….. you could stick with tacos, or mix it up and make a delicious Chicken Tortilla Soup, or Taco Soup.  These meals are super economical and you would only pay like $2 a person for these delicious meals.

This week we have Country Style Ribs for $1.88/lb.  My family loves ribs! And I love the fact that I can make a super quick main course in the crock pot in less than 2 minutes.  You can follow Elise’s recipe here for Slow and Low Country Ribs, or  simply place the ribs in the crock pot, add salt, pepper and 1.5 cups of water and 1/2 cup BBQ sauce and cook on low heat for 10 hours.  The ribs come out amazingly tender and so flavorful!  Of course you can find hundred of recipes online – but this is one I’ve used for 10 years and is a kid favorite and mom favorite because its so easy!  I served this with baked potatoes and mixed veggies and we had a dinner for our family of 5 for under $10. ($6.50 for the ribs, $.88 for the Green Giant Steamed Veggies and $1.49 for the 10 lb. bag of potatoes that were on sale last week).

Italian Breaded Pork Chops  are a great option for pork chops this week.  Serve these with the Free Annie’s shells & cheese and some steamed cauliflower or if you want to go crazy – make a cheesy cauliflower casserole.

Greek Roasted Chicken Leg Quarters are another favorite in my household.  Another family favorite as my kids love the dark meat!  Again – super easy – simply place in  a pan, sprinkle with salt, pepper, oregano, cut up some potatoes, add some chicken broth and lemon juice and bake on 350 for 1 hour.  You have a super delicious meal with minimal prep.

Cod Sauteed in Olive Oil with Fresh Tomatoes is a delicious option I’ve made a lot throughout the years and it goes great over wild rice, or one of the pre-made Rice a Roni side dishes.

A couple of side options include – Betty Crocker Meal Helpers, which are on sale for $.88 a box, Rice a Roni, on sale for $.75 a box, Colorado grown squash – on sale for $.79/lb. and fresh cauliflower and broccoli on sale for $.99 a lb.

Minimal time in the kitchen is my motto – with 3 kids and lots of after school activities, I love crock pot meals, one-pot meals and anything that can be done in 30 minutes or less!
