Scalloped Corn Casserole is American comfort food that is delicious and easy to prepare as a side dish for any dinner.  Whether you want to serve as a Thanksgiving side dish, or as a side for an everyday dinner, Scalloped Corn Casserole will be a hit on your table!  Simply combine canned corn with cream style corn, chopped cooked bacon, chopped onions and crushed butter crackers with an egg to bind it all together in a baking dish.  Top with more crushed butter crackers and melted butter for an extra crunch.

I partnered with Kuner’s Foods to bring you this recipe and video of Scalloped Corn Casserole, which is a perfect use of the canned veggies that have been on super sale at Safeway this month!  I have to admit, I had not previously tried scalloped corn before testing this recipe for Kuner’s Foods, but I will say I’ve since made this dish three times for my family and it’s been devoured in entirety all three times.  The simplicity of the ingredients and ease of preparation make this delicious casserole recipe a keeper!

Corn Casserole

Comfort food corn casserole that combines cream style corn with whole corn kernels, bacon, onion, egg and crushed butter crackers. A perfect side dish for any holiday table.

Ingredients

  • 1 15 oz can Kuner’s® Whole Kernel Corn, drained
  • 1 14.75 oz can Kuner’s® Cream Style Corn
  • 1 egg
  • 1 sleeve buttery crackers crushed
  • 1 onion chopped
  • 6 slices bacon cooked, chopped
  • 2 tablespoons butter melted
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350.
  • Combine corn, egg, onion, bacon, 3/4 of the cracker crumbs, and 1 tablespoon butter.
  • Pour into 2 qt. casserole dish.
  • Combine remaining butter and cracker crumbs, and spread evenly over the corn mixture. 5. Bake at 350 for 50 minutes.
