Minty Shamrock Shake

Healthier Minty Shamrock Shake made with mint ice cream, milk, chocolate drizzle, and some added green from fresh mint and spinach.  It’s a delicious way to celebrate the holiday!  This is not a smoothie, it’s totally a milkshake, but it’s made healthier with the addition of fresh spinach.  

It’s that time of year when everything green is in for St. Patrick’s Day, including the minty green shamrock shake.  

I have never tasted the McDonalds version, but I can imagine the flavors, so this recipe is my version of a minty green ice cream milkshake.  We are using real ice cream and real milk, BUT we add just a touch of nutrition with spinach and fresh mint.  The kids will never know it’s in there and you are not adding artificial colors to the shake!

Safeway’s Signature SELECT brand of ice cream is available in several mint flavors.  I chose the mint Moose Tracks ice cream which has a fudge swirl through the center.  It’s rich, minty, and delicious!  You can also choose Mint Chocolate Chip or Mint Cookies and Cream.  The Mint Chocolate Chip will likely keep its minty green color the best, whereas the cookies and cream variety turns muddy and brown when blended. 

In my opinion, a perfect milkshake has the right ratio of milk to ice cream, and I believe that is 4-5 scoops of ice cream to 1 cup of milk.  Throw in a handful of spinach and some mint leaves to brighten the color a bit and you’ve got a perfect shamrock shake!

Shamrock Shake Ingredients

  • 4-5 scoops Signature SELECT Mint Moose Tracks Ice Cream 
  • 1 cup milk (I used O Organics Whole Milk)
  • 1 1/2 cups O Organics Fresh Spinach
  • 4-5 fresh mint leaves
  • 1 cup Lucerne heavy whipping cream or prepared whipped cream
  • 1/4 cup Signature SELECT Chocolate Chips, melted

How to Make a Shamrock Shake

Easy peasy!  You are just making a milkshake, but adding green veggies to it to make it bright green.  The more spinach you add, the brighter green it gets.  Trust me, you don’t even taste the spinach.  The mint ice cream flavor is the only thing that comes through in this healthier version of a shamrock shake!

If you are making your own whipped cream, beat the heavy whipping cream before you make the shake, so that it’s ready to dollop as soon as the shake is blended.  

In a small glass bowl, add the chocolate chips and melt for 1 minute, 30 seconds in the microwave.   You can add 1/2 teaspoon of coconut oil to make it drippy if you’d like. 

Add 4-5 scoops of ice cream to the blender along with the milk, spinach, and fresh mint.  Blend for 1 minute until creamy. 

Pour into a glass and top with whipped cream, a few chocolate chips and a drizzle of melted chocolate.  Enjoy right away.

Note – you may see some separation in the glass, but that is the chocolate coming to the top.  Absolutely nothing to worry about – it tastes amazing!
