Spanakopita Grilled Cheese
A healthier take on the Greek Spanakopita that features the same delicious spinach and feta filling inside your favorite toasted bread with extra gooey cheese. This is heaven on a plate!
I’m a traditionalist when it comes to spanakopita. This is a condensed version of my yiayia’s and my mom’s filling recipe where fresh ingredients prevail. Fresh spinach, dill, parsley, mint and green onions make up the greens in the filling. Garlic and shallot add flavor along with salty feta which ties it together. A traditional spanakopita filling would also have egg as the binder for the pita, but we omit the egg for this version since we are using it to make a grilled cheese sandwich.
You can also use the filling in a quesadilla with a toasted tortilla… talk about culture fusion right there.
Take advantage of sales on fresh spinach and cheese at Safeway to make this spanakopita grilled cheese for lunch or dinner this week. So much faster than the original as you don’t have to butter layers of phyllo dough. The only thing you butter in this recipe is the bread!
This is so easy and so good, you can double the recipe to make more sandwiches.
Spanakopita Grilled Cheese Ingredients
Makes 2 sandwiches
- 1 tablespoon olive oil
- 1/2 shallot, minced
- 2 green onions, diced
- 2 cloves garlic, finely minced
- 2.5 oz fresh spinach, roughly chopped
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped (optional, but recommended)
- salt and pepper to taste
- 1/4 cup feta cheese
- 4 slices of bread (I used sourdough)
- 4 slices mozzarella cheese
- butter
How to Make Spanakopita Grilled Cheese
heat olive oil in a large skillet over medium heat. Add the minced shallot and green onion and saute until soft, about 2-3 minutes. Add the minced garlic and cook until fragrant, about 1 minute. next add the chopped spinach and fresh herbs to the skillet. Stir until the spinach is wilted. Season with salt and pepper. Just a pinch of salt will do since the feta is salty.
Add the feta cheese and stir until incorporated. Remove from the heat.
Heat a clean skillet over medium heat. Butter one side of the bread and place it butter side down in the hot skillet. Add a slice of mozzarella cheese, then 1/4 cup of the filling and another slice of mozzarella, then the top piece of bread with the butter on top.
Cook the grilled cheese for about 4 – 5 minutes until the cheese is melted and gooey, then flip the grilled cheese and cook for another 4 minutes until the bread is golden and the cheese is melted.
Enjoy.
