Tofu Pad Thai

Creamy and flavorful Thai-style peanut sauce tops rice noodles, tofu and veggies in this delicious tofu pad thai recipe.

Take advantage of sales on bell peppers and peanuts at Safeway this week to make a delicious take-out-style meal at home.

New at Safeway – you’ll find Signature SELECT Thai-Style Peanut Sauce.  The sauce is perfect for making your favorite Thai-style dishes at home.  It has soy sauce, peanuts, rice vinegar, sesame oil, ginger, chili powder, and lemongrass.

While you can make your own peanut sauce if you have a well-stocked pantry – this sauce has everything you would need in a single bottle!  Traditional pad thai calls for fish sauce, ginger, lemongrass, peanut butter, soy sauce – so unless you make a lot of Asian dishes, you may not have all those ingredients on hand.

This new sauce is delicious and so easy to use!

Use it to flavor Thai noodle dishes like pad thai, as a dipping sauce for your favorite spring rolls.

How to Make Crispy Tofu

Preheat oven to 400°

Remove the tofu from the package and place in between 2 paper towels to squeeze out all excess liquid.

Dice the tofu into 1 inch cubes.

Place the cubed onto a baking sheet and drizzle with olive oil.

Bake the tofu for 30minutes, turning once halfway through.

This dehydrates the tofu and makes it crispy for the pad thai.

Meanwhile, heat the olive oil in a non-stick skillet over medium-high heat.  Add the minced ginger, sliced bell peppers and green beans to the skillet and saute until cooked through – about 10 minutes.

Add the tofu to the pan, then add 1 cup of the Thai Style Peanut Sauce.

Cook Rice Noodles according to package directions.

Remove the veggies and tofu from the pan and reserve them on a plate while you scramble the eggs. Add the beaten eggs to the pan and mix until cooked through and scrambled.

Place the tofu and veggies back into the skillet.  Add the Rice noodles and drizzle more of the peanut sauce.  Stir well until combined.

Top with chopped peanuts, and serve with lime wedges and a side of sriracha sauce.  You could also add fresh chopped cilantro and Fresno chilis if desired.

Enjoy.
