Sheet Pan Pancakes With Bananas and Bacon
Simplify pancakes for a crowd with this sheet pan pancake recipe! Simple, full of delicious flavor and made with classic breakfast favorites– bacon and banana pancakes– this recipe is perfect for any weekend brunch!
Safeway has a fabulous price point on bananas, so it’s a great time to pick up a couple of bunches the next time you are at the store.
Use the bananas for these sheet cake pancakes, or you can also freeze the bananas to make “nice cream” or let them go really ripe to make banana bread.
What makes this recipe so great is that you don’t have to stand over a griddle flipping pancakes. Simply pour the batter into the baking sheet along with cooked, chopped bacon and some sliced bananas and let it bake for 25 to 30 minutes for a delicious breakfast with a fruit and protein baked inside!
Ingredients
- 2½ cups buttermilk
- 2 large eggs, beaten
- 2 teaspoons vanilla extract
- 1/3 cup Signature SELECT® granulated sugar
- 1 teaspoon kosher salt
- 4 tablespoons unsalted butter, melted
- 2¾ cups Signature SELECT® all-purpose flour
- 1 tablespoon baking powder
- 1½ teaspoons baking soda
- 6 pieces bacon, cooked and cut into 1/4-inch pieces
- 2 bananas, cut into 1/4-inch thick slices
Optional
- 2 tablespoons unsalted butter, melted
How to Make Sheet Pan Pancakes
Step 1
Preheat oven to 350°. Line a 13×18 rimmed baking sheet with parchment paper then apply non-stick cooking spray.
Step 2
In a medium bowl, whisk to combine buttermilk, eggs, vanilla, sugar, salt, and butter. In another medium bowl, stir to combine flour, baking powder and soda. Pour wet ingredients over wet ingredients, stirring until just combined (batter will be slightly lumpy.)
Step 3
Pour batter into the pan and spread evenly. Top with banana and bacon pieces. Tap the bottom of the pan on the counter to help evenly distribute the batter in the pan.
Bake for 20-25 minutes, until knife inserted into the center, comes out clean.
Optional Step
Turn oven to broil. Brush 2 tablespoons melted butter to the top of the pancake and broil 1-2 minutes until golden brown. Cut into 12 pancakes. Serve.
Serve pancakes with peanut butter and warmed maple syrup.
For a warm, spicy note, sprinkle bananas with 1 teaspoon ground cinnamon before placing on top of the batter.

I also added blueberries. I cooked the bacon 10 minutes while mixing everything else. Everyone went back for seconds. Great thing also is it’s all done at once so we can all eat when it’s hot. Unlike pancakes which you have to wait on.
