One of my family’s favorite meals that we enjoy from the Yard House and from California Pizza Kitchen is the BBQ Chicken Pizza. I make flatbreads almost weekly because they are so easy and a much healthier alternative to pizza because of the thin crust. This BBQ Chicken Flatbread is literally on bi-weekly rotation and is the most requested item I make.
Take advantage of hot sales on BBQ sauce, chicken, cheese, and red onions at Safeway to make a budget-friendly and delicious dinner the whole family will love.
I used the O organics Sweet & Spicy BBQ Sauce – it has a subtle heat and a lot of sweetness. You can use any BBQ sauce you have on hand, but I like a sauce that has some heat for this flatbread.
I normally use the Signature SELECT Artisan Garlic Naan for this flatbread, but as I was out, I substituted for a whole wheat pita bread, which I always have on hand. The flatbread is super easy to make as long as you have everything prepped and ready to go. Follow the directions below to make this flatbread in a snap!
We had more jalapenos than anything else come up in the garden this year… well kale was #1, but jalapenos were #2, so I’ve been adding jalapenos to all my cooking Luckily they are mild. You can omit the jalapenos, but honestly, they make this pizza!

How to Make BBQ Chicken Flatbread Pizza
Heat the grill to medium-high heat – around 400° F.
Slice the 2 chicken breasts into 3rds lengthwise so that you have 6 thin breast pieces that will grill quickly. Drizzle with olive oil and season both sides with chili powder, cumin, oregano, garlic powder, salt, and pepper.
Place the chicken breasts on a clean hot grill and cook for 4 to 5 minutes on each side. Remove the chicken from the grill and set it aside on a plate. Keep the grill hot. Dice the chicken into cubes for the pizza.
Take the pita bread or naan, cheese, BBQ sauce, and diced chicken to the grill with you on a large cutting board. Brush one side of the pita bread very lightly with olive oil and rub a clove of garlic on the bread to give a slight garlic flavor.
Clean the grill grates and set the pita bread over low heat for 2 minutes to toast the top of the pita bread where all the toppings will go.
Remove the pita bread from the grill and assemble the pizza. Brush on BBQ Sauce, add the shredded mozzarella cheese, add the diced cooked chicken, then add the thinly sliced red onions.
Place the flatbread back onto the grill over low heat for about 5 minutes until the cheese is gooey and melted.
Remove from the grill, garnish with fresh jalapeno slices and parsley or cilantro.
Enjoy with a cool glass of beer or Soliel Sparkling Water in lime.

How to Make Vegetarian BBQ Flatbread
If you happen to have a vegetarian family member – you can substitute sweet potato for the chicken. Slice the sweet potato into rounds, brush with olive oil, season with salt, pepper, garlic powder, and chili powder and grill the rounds on a preheated medium-high grill for about 5 minutes on each side until soft. You can also roast the sweet potato if it is not grilling season.
Remove from the grill dice into squares and use as the topping of the pizza along with the cheese, red onions and jalapenos.
