Cajun Shrimp Avocado Cucumber Bites 

If you are looking for a healthy, low carb, clean appetizer that you can make for the big game, or your next girls’ night or social gathering, these Cajun Shrimp and Avocado Bites are perfect!

An explosion of flavors with blackened shrimp, creamy remoulade sauce with a kick, and smashed avocado over a crunchy cucumber, this is a delicious appetizer that so easy to make and everyone loves it!  Even my kids love this. 

Take advantage of the sale on avocados at Safeway and use up shrimp from the freezer – or pick some up at your local Safeway to make this easy appetizer.  It’s also perfect for Mardi Gras with the cajun spices and the remoulade sauce – it’s definitely a Louisiana inspired recipe. 

Ingredients:

  • 1/2 lb. shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon cajun or creole seasoning
  • fresh lemon juice
  • 1/2 English cucumber, sliced
  • 2 avocados
  • 2 green onions, diced
  • fresh lime juice
  • 1 tablespoon cilantro or parsley, minced
  • 1 teaspoon garlic salt
  • pepper to taste

Remoulade Sauce

  • 1/2 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 teaspoon paprika
  • 1-2 teaspoons Cajun or Creole seasoning 
  • 1 teaspoon horseradish
  • 1 teaspoon pickle juice
  • a few dashes of Louisiana style hot sauce
  • 1 teaspoon garlic powder

 

Heat oil in a large skillet over medium heat.  Add the shrimp, then season with cajun seasoning.  Cook for about 5 minutes, stirring frequently until the shrimp is cooked through. 

While the shrimp is cooking, in a medium bowl, combine the avocado, diced onions, cilantro, garlic salt, pepper, and the juice from a lime.  Stir well until combined. 

In a separate small bowl, combine the mayo, mustard, paprika, Cajun seasoning, horseradish, pickle juice, hot sauce and garlic powder and mix well until combined. 

Place a dollop of the avocado on each cucumber slice.  Top with the blackened shrimp and a teaspoon of remoulade sauce.  Garnish with extra minced parsley if desired.
