Salads as a meal are a staple in my household. I always chose a lean protein like fish or chicken to top my salads and add flavor.  I love making my own dressing because you can control the ingredients and mix it up every time.

I partnered with Wunder Quark to create a recipe using their plain quark.  Quark is a cultured dairy that is similar to thick yogurt.

Unlike yogurt, quark is not tart, which makes it a perfect choice for using to make a creamy dressing.

Not only are you adding protein to your salad, but you are also adding probiotics in the dressing, which is healthy for your gut and overall well being.

Not to mention, the quark gives the dressing a wonderful flavor and creamy consistency, perfect as a topping for crunchy veggies.

The quark ingredient list is short and you can feel good about it because it’s non-GMO, and has no artificial sweeteners, starches, or gelatins. They only source local, hormone-free milk from grass-fed cows raised on small family farms.

Additionally, if you are lactose intolerant like me, you’ll find there is very little lactose in the quark, so it can be used to make a creamy, yogurt-like dressing without the lactose side effects.   While it still has dairy, it’s virtually impossible to find a plain, lactose-free yogurt that can be used for dips and dressings – which is why I recommend Wunder Quark.

Preparing the Blackened Salmon Salad

Heat a cast-iron or non-stick skillet over medium heat.

Brush the salmon fillets with melted butter then coat generously with the homemade blackened seasoning blend.

Place the salmon in the hot skillet with the skin side up.  Sear the salmon for about 5 minutes.  While the salmon is cooking brush the skin with olive oil or melted butter to prevent sticking.   Flip the salmon to cook the other side.  Depending on the thickness of your salmon, cook for another 5 to 8 minutes until the salmon is opaque and cooked through.

To roast the corn – take the fresh corn on the cob and place it in a hot non-stick skillet, turning the corn every few minutes until it’s charred – about 10-15 minutes.  Cut the kernels off the cob and reserve them to top the salad.

How to Make Quark Dressing

Combine the dressing ingredients in a mini food processor and process until smooth.  If the dressing is too thick, you can add more olive oil, or a teaspoon of water to thin it out.

The dressing will last in the refrigerator for 5 days, covered in an airtight container.

Assemble the salad

Place the chopped kale, romaine lettuce, halved tomatoes, chopped onions, roasted corn on a large platter.  Toss to mix.  Top wtih the blackened salmon and the avocado quark dressing.
