Cherry Almond Tart

Crisp puff pastry topped with a cherry almond filling and sweet cherries makes this cherry almond tart the perfect summer dessert when cherries are in season!

The tart is perfect as a breakfast pastry, or a dessert!

Cherries and almonds go hand in hand and make for perfect flavor combinations when making desserts.   The almond base is similar to a frangipane but does not have eggs or sugar so it’s not a true almond cream – it’s even better. 

I was inspired to create this recipe based on a strawberry cream cheese tart that I make, but I wanted to make it dairy-free, so I could enjoy it too!  

Ingredients

I started testing the recipe with slivered almonds, and while I watched the almonds whirl away in the food processor, I was reminded that I had a bag of almond flour in the pantry.  I scrapped the almonds and went with the almond flour. 

The difference was in the texture, with the almond flour texture being smoother.  If you don’t have almond flour, but you have almonds, it will take a few extra minutes to get to a smooth consistency in the food processor. 

The result is a light, slightly sweet cherry almond filling that is bright pink topped with sweet cherries.  SO good!

  • 1 sheet puff pastry
  • 1 cup Open Nature Almond Flour
  • 32 fresh cherries, stems removed, pitted and halved
  • 1 lemon, zest, and juice
  • 1/4 teaspoon almond extract
  • 2 tablespoons honey
  • 1 egg, beaten (optional)
  • 1/4 cup turbinado or sanding sugar (optional)

How to Make a Cherry Almond Tart

This is a super simple recipe and because we are using pre-made puff pastry, you don’t need skills as a pastry chef to make it!

Preheat the oven to 400° F. 

Make the filling by combining the almond flour, 5 pitted cherries, the zest of one lemon, and juice of half the lemon (about 2 tablespoons), almond extract, and 2 tablespoons of honey into a food processor.  Pulse until the mixture is combined for about 1 minute. 

Meanwhile, prepare the puff pastry dough by placing it on a pan with parchment paper, then cut it into 6 even squares.   Score the pastry inside the squares about 1/4 inch from the edge.   To score means to cut lightly on the top with a sharp knife, but not cut all the way through. 

Add 1 tablespoon of filling to the center of each pastry square, then top with 6-9 cherry halves, to fill the square. 

If desired, you can create a crunchy sugar edge by brushing the edge of the pastry with the beaten egg and sprinkling the sanding sugar over the egg.  While I say this step is optional, I highly recommend this step for a bakery-style pastry your family can enjoy. 

Bake for 20 to 25 minutes until golden brown.

Can These Tarts be Made Ahead?

Because I did not sweeten the cherries at all and because we are using almond flour as the base of the filling, these stayed crisp throughout the entire tart. 

Therefore, you can make them ahead of time.  I would suggest baking them the morning of your event and storing them on the counter with a paper towel draped over them.  If you want to reheat just before serving, place them into a preheated oven for about 5-7 minutes just to heat through, but they taste perfect served at room temperature!

You cannot refrigerate these after they are baked as the pastry will get soggy and lose its crisp texture. 

If you have any leftover tarts, you can store them in an air-tight container on the counter.
