Grilled Salmon Salad
This Grilled Salmon Salad is perfect for summer entertaining. Featuring fresh salmon and produce from Safeway®, it’s easy to assemble, presents beautifully and the flavor profile is on point!
Zesty grilled salmon is served over a bed of Safeway exclusive O Organics® Super Greens, fresh grilled corn, tomatoes, cucumbers, red bell peppers, and red onions.
The salad is garnished with a fragrant garlic lemon herb dressing that has fresh dill, basil, and parsley as well as dried herbs. It’s super fresh, citrusy, and flavorful!
Ingredients in Grilled Salmon Salad
- 1.5 lbs salmon, 1 teaspoon olive oil
- O Organics® Steak Grilling Seasoning
- 2 ears corn, 1 cup tomatoes, halved
- 1/2 English cucumber, halved and sliced
- 1/2 cup red bell pepper, chopped
- 1/2 cup red onion, chopped,
- 2 tablespoons fresh herbs (parsley, dill, basil)
- 1/4 cup olive oil
- 1 large garlic clove, minced
- a pinch of O Organics® Italian seasoning
- salt and pepper to taste
Here’s how to make the salad:
- Heat the grill to medium-high heat.
- Remove the salmon skin (if desired), slice the salmon into 4 portions, drizzle with olive oil, then sprinkle with O Organics Steak Grilling Seasoning.
- Place the salmon and corn on the grill and cook for 5-6 minutes on each side.
- Cut the corn kernels off the grilled corn.
- Make the dressing by combining the fresh chopped herbs with olive oil, lemon juice, minced garlic, salt, pepper and dried Italian seasoning. Stir until combined.
- Assemble the salad by layering the greens, grilled corn kernels, tomatoes, cucumbers, red pepper, red onion, the salmon and the dressing.
- Enjoy!
