Toasted Chipotle Roast Beef Sandwich

Here is a perfect recipe to make with the Cross Rib Roasts on sale at Safeway this week! Take the time to slow cook your beef in a crockpot or in the oven with a little beef broth and then shred the beef to make these delicious sandwiches over and over for dinners or lunches this week.
Combine shredded beef with chipotle peppers in adobo sauce (find these in the International food aisle with the canned chile peppers) and cheese to mix up your traditional roast beef sandwich with an extra little kick from the chipotle peppers!

Chipotle Roast Beef Sandwich Recipe
Meal Prep 101: Shredded Crockpot Beef
- 5-6 lb boneless cross-rib roast or chuck roast
- 1/4 cup red wine
- 1/4 cup Worcestershire sauce
- 5-6 cloves garlic (chopped or grated)
- 8 ounces baby Bella mushrooms (chopped)
- 1 1/2 teaspoons kosher salt
Sandwiches
- 8 slices whole-grain or multi-grain bread
- 3/4 cup shredded Swiss cheese
- 2 tablespoons chipotle peppers in adobo sauce (chopped)
- 1 1/3 shredded cooked beef roast (see Meal Prep 101: Shredded Crockpot Beef recipe)
Au Jus
- 2 cups O Organics™ Beef Broth (or juice from the cooked roast)
- 4 peppercorns
- 1 bay leaf
- 1/2 teaspoon dried rosemary
Preparing the Shredded Beef
Put the beef roast, red wine, Worcestershire sauce, garlic, mushrooms and salt into a large slow cooker. Cook on high for 3-4 hours, or low for 5-6 hours.
Turn off heat and let the roast rest for 10-15 minutes. Remove and shred with two forks.
Refrigerate or freeze in 1-2 cup portions (recipe makes about 8), and use for sandwiches, tacos, salads, main dishes, etc. to make meals throughout the week easier. Reserve liquid to use in soups or stews — it’s delicious!
How to Make Chipotle Roast Beef Sandwiches
In a small saucepan, add all au jus ingredients: beef broth or juice from cooked roast, peppercorns, bay leaf, rosemary. Let au jus cook on medium heat until it reaches a boil, then turn it on low to simmer while the sandwich cooks.
Preheat the oven to a low broil. On a baking sheet, lay all 8 slices of bread. Place in the oven until toasted, about 2-3 minutes. Remove from oven and flip each piece.
In a small bowl, mix the Swiss cheese with chipotle peppers & sauce with a fork. Spoon cheese mixture onto 4 of the bread slices, putting about 3 tablespoons on each.
Divide shredded beef onto the other 4 pieces of toasted bread. Place back in the oven to let the cheese melt, about 2-4 minutes.
Remove, letting cool a minute, then put each of the four sandwiches together. Remove au jus and pour into 4 individual dipping containers. Slice the sandwiches and serve with dip.
