Fresh Express Spinach Sale

I found an incredible unadvertised sale on Fresh Express Spinach at Safeway this week!  The 9 oz bags of Fresh Express Spinach are on sale for just $1.00.  No coupons needed for this super low price!  Spinach is fabulous in salads and for cooking.  I love making spinach quiches because they are perfect for breakfast, lunch and dinner on a budget!

Here’s my spinach quiche recipe that I always use.  This is adapted from the Better Homes and Garden’s Cookbook that I received as a wedding gift 15 years ago and has become my go-to spinach quiche recipe that I make at least twice a month.    All of the ingredients for this quiches are on sale at Safeway this week!  Here are the sales you can choose from for this recipe:  pie crust – Safeway Pie Crusts 2 ct. on sale for $2.00, or Marie Callender’s Pie Crust $2.49 with Just for U,  18 count eggs on sale for $1.49, sour cream on sale for $.79 with Just for U, half and half on sale for $.79 with Just for U, Lucerne Shredded Cheese 16 oz on sale for $1.99.

Spinach Quiche

Ingredients:

• 2 store bought pie crusts
• 1/2 cup chopped onion
• 8 beaten eggs
• 1/2 cup sour cream
• 1/2 cup half and half, milk or light cream
• 1/4 tsp salt
• 1/8 tsp ground white pepper
• dash of ground nutmeg
• 3 cups packed chopped fresh spinach
• 2/3 cup shredded mozzarella cheese
• 1/2 cup shredded Swiss cheese

Directions:

Preheat over to 325 degrees

1.  In a large skillet, cook the onion until tender

2.  In a bowl, stir together eggs, sour cream, half n half, salt, pepper, nutmeg, cooked onions and chopped spinach and cheeses

3. Pour the egg mixture into the pie crusts (pouring half of the mixture evenly into each crust)

4. Bake for 45 to 50 minutes until knife inserted comes out clean and the crust is brown.
