A refreshing strawberry fields salad is the perfect summer salad complimented by lemon agave vinaigrette, grilled chicken and the addition of fresh strawberries, blueberries, avocados, nuts, and cheese

Summer is perfect time to take advantage of fruit salads like this Strawberry Field Greens Salad and grilled chicken.  I know that’s a mouthful, but trust me, one bite and you will want a mouthful of this salad!   

We created this recipe using organicgirl spring mixed greens salad and the organicgirl lemon agave dressing to celebrate the end of the summer season and highlight their amazing new organic selection of dressings available at Safeway.

Strawberry Field Greens Salad

To make this salad, simply marinate the chicken in the organicgirl lemon agave vinaigrette for at least an hour, but no longer than 12 hours.  The dressing infuses a fantastic lemon flavor into the chicken with just a hint of sweetness from the agave, but you don’t really taste the agave when the chicken is grilled. 

While grilling the chicken, you can quickly prep the salad by hulling and slicing the strawberries, slicing the avocado, chopping the green onions and toasting the sliced almonds. 

Combine the spring green salad mix, strawberries, blueberries, fresh dill, feta cheese and toasted almonds and toss with the organicgirl lemon agave dressing. Slice the grilled chicken and dinner is served!  I topped my salad with a touch of lemon zest for additional brightness.  Delicious, easy to make and clean up is easy too!  My kind of meal!

The organicgirl baby spring mix contains a fantastic mix of organic greens including baby green and red romaine lettuce, tango, baby spinach, baby oak leaf lettuce, baby red and green chard, baby red and green leaf lettuce. 

The salads are triple washed so you can use directly from the recycled container and skip a step of washing the lettuce for the salad.

The organicgirl lemon agave dressing is truly one of my family’s favorites since originally reviewing the dressing in May. 

It’s tart yet sweet from the agave with whole pieces of lemon in the dressing.  This dressing does need to come to room temp just a little bit before you can use it because the oil and lemon pieces solidify slightly in the bottle but once left on the counter for a few minutes, it’s  perfect! 

This makes an amazing marinade for the chicken.  The acid in the lemon tenderizes the chicken and the agave adds a great flavor and actually caramelizes on the top of the chicken as it’s grilled.

Ingredients

  • 4-5 boneless, skinless chicken breasts
  • 1 package 5 ounces organicgirl® baby spring mix
  • 1/2 pint fresh strawberries hulled and sliced
  • 1/2 pint fresh blueberries
  • 1 bunch green onions
  • 1/2 cup organicgirl® lemon agave dressing divided
  • 1/4 cup crumbled feta cheese1/4 cup sliced almonds toasted
  • 1/4 cup fresh dill weed chopped
  • 1 avocado sliced
  • salt
  • pepper
  • oregano
  • lemon zest optional

Instructions

For the Chicken:

  • Begin by seasoning chicken breasts generously with salt, pepper and oregano. Place seasoned chicken in a glass bowl or plastic bag and pout 1/4 cup organicgirl lemon agave dressing over chicken. Mix well. Allow chicken to marinade for at least 1 hour, but no more than 12 hours.
  • Heat grill to medium high heat and grill the chicken breasts 8-9 minutes per side until chicken is cooked through and has a golden brown color to it.

For the Salad:

  • Toast the almonds by placing in a non-stick pan over low-medium heat for 4-5 minutes, tossing/stirring frequently until golden brown. Let stand until cool.
  • Toss the almonds, mixed greens, green onions, strawberries, blueberries and dill weed in a large serving bowl/dish. Top with feta cheese and avocado slices. Add the lemon agave vinaigrette just before serving and toss.
  • To plate -serve the dressed salad on a plate with the sliced chicken. Top with fresh lemon zest for extra brightness if desired.
