Grilled Chicken Tacos With Pineapple Salsa

I recommend using the fresh cut pineapple available in Safeway’s produce section – it’s actually about the same price as the fresh whole pineapples and the cutting is done for you, so you can skip that step!  Grilling the pineapple and red onion will give you a smoky caramelization that adds delicious flavor to the recipe.

Grilling the jalapeno pepper actually makes it a little sweeter, but still with a spicy kick that ties the recipe together.

Once the onions, jalapenos and onions are charred just a bit, you can dice into small cubes and mix with red bell pepper and fresh lime juice to create a salsa for the chicken tacos.

Ingredients

  • 2 chicken breasts about 1 1/4 lbs
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/8 tsp cayenne pepper
  • 2 1- inch thick rounds fresh pineapple
  • 1 small jalapeño seeds removed
  • 1/4 medium red onion sliced thick for grilling
  • 1 Tbs lime juice about 1/2 lime
  • pinch of kosher salt
  • 1 red bell pepper 1/4-inch julienne cut
  • 8 corn tortillas

Optional:

  • cilantro leaves
  • fresh lime wedges
  • sour cream or plain yogurt

Instructions

  • Preheat grill to medium heat (350º-400º.) Season chicken with cumin, garlic powder, salt and cayenne pepper. Grill for 8-12 minutes, or until internal temperature of 160º is reached. Remove and cover with foil. Let rest 5 minutes. Slice into thin strips.
  • Grill pineapple, red onion and jalapeño 5-8 minutes, until slightly charred. Remove and dice into 1/4-inch pieces. Add lime juice and salt. Set aside.
  • Warm tortillas on grill, about 30 seconds per side. To assemble tacos, add chicken, red bell pepper and salsa. Serve.

Notes

Pro Tips: 1. Mango can be substituted for the pineapple for a different flavor composition. 2. For juicy, tender chicken, allow chicken to rise to room temperature prior to grilling (about 15 minutes).

    Tried this last night. Very good. Would have given it 5 stars, but my service dog (who cleans up leftovers) dislikes jalapenos (he still ate it, just gave me the aggrieved look)!
