Hearty White Chili

With the awesome Buy One Get One Fee pork sale happening at Safeway right now – here is a fantastic White Chili recipe that you can make with diced pork, canned beans, chicken broth, chopped onions and diced green chili’s.  This is a super quick and delicious recipe, perfect for this cold and snowy Colorado weather, or anytime!  Most of the ingredients you may already have in your pantry!  You can serve with homemade pita or tortilla chips that you season with a little paprika and salt then bake until crisp.

Hearty White Chili Recipe

Ingredients:

• 1 cup chopped onion
• 1/2 tsp salt
•  1/4-1/2 tsp black pepper
•  1 Tbs ground cumin
•  1 lb thin cut pork chops, cut into 1/2 inch diced pieces
•  2 (7 ounce) cans diced green chilis
•  1 (15 ounce) can hominy
•  2 (15 ounce) cans cannellini beans
•  1 cup chicken broth (low sodium)

 Directions:

• Preheat a 5-quart pot over medium-high heat and spray with non-stick cooking spray.
• Add onion and cook until translucent, about 2-3 minutes. Add pork, salt and pepper. Sauté pork mixture about 3-4 minutes.
• Push pork mixture to the side of the pot and add cumin to the bare area of the pot, stirring to toast the cumin, about 1 minute.
• Add remaining ingredients and stir well to incorporate flavors.
• Reduce heat to medium-low, cover and simmer for 10 minutes. Serve.
