Mozzarella, Pesto and Tomato Pizza
It’s National Pizza Day! Hooray for food holidays. Did you know making your own pizza is incredibly easy to do and is also easy on the budget? Safeway makes it even easier with pre-made pizza dough that you can pick up in the refrigerated section of the deli for cheap! We make homemade pizzas all the time and the kids love that they choose their own toppings. I typically cut up peppers, onions, and tomatoes and have an assortment of olives, pepperoni and salami available for the kids to make their section of the pizza. It’s fun! This pizza uses 4 main ingredients and it tastes amazing. It’s like a caprese, but without the basil. If I had fresh basil – I would’ve put it on top in a heartbeat. The pesto is the sauce, so it gives the pizza so much flavor and you don’t need a red sauce at all.
Homemade Mozzarella, Pesto and Tomato Pizza recipe:
Ingredients:
- 1 ball of Primo Taglio Pizza Dough
- 2 TBSP of Pesto (store-bought is great)
- 1 ball of fresh mozzarella, thinly sliced
- 1 tomato
- sprinkle of grated parmesan cheese
- salt & pepper
- flour for dusting the rolling surface
Directions
1. Preheat Oven to 400 degrees
2. Let the pizza dough come to room temperature (about 20 minutes). This is the most important step and the dough will not be pliable if you don’t do this
3. Sprinkle 1/4 cup of flour onto a cutting board or a counter top and then place the pizza dough on it and add a little flour to the top so that the rolling pin doesn’t stick to the dough
4. Roll the dough with a rolling pin until it’s flat. Then continue to stretch the dough gently with your hands until it fits the pan that you are using to cook it
5. Spread the pesto, add the fresh mozzarella slices and tomatoes then top with grated parmesan cheese, salt and pepper
6. Cook for 17 minutes until the cheese is melted and the pizza crust is brown
