Maple Glazed Pumpkin Cookies

These Maple-Glazed Pumpkin Cookies are a great way to celebrate fall and fulfill those seasonal pumpkin cravings. They’re a delicious morning treat alongside a pumpkin spice latte and great for sharing at school or the office.

This cold, dreary fall weather has me in the mood to bake!  What’s better than Maple Glazed Pumpkin Cookies to celebrate the fall season?  

Um.. nothing!  Maybe adding some chocolate chips to pumpkin cookies, but I digress.  

These Maple Glazed Pumpkin Cookies are outstanding, melt in your mouth deliciousness.  

You won’t be able to have just one.  The aromas of pumpkin pie spice baking in your oven will draw everyone to the kitchen to await the timer to ding!  

Take advantage of hot deals on pumpkin puree, flour, sugar, and eggs at Safeway to make these pumpkin cookies this week.  You can store in an airtight container to keep them soft if you have any leftovers!

Ingredients:

  • 1 cup pure pumpkin puree
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon pumpkin pie seasoning
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 egg
  • 1 teaspoon vanilla

Glaze

  • 2 cups powdered sugar
  • 3 tablespoons milk
  • 1 tablespoon unsalted butter (melted)
  • 1 tablespoon imitation maple extract

How to Make Pumpkin Cookies

Preheat oven to 350º.

In a mixing bowl cream together butter and sugar. Add pumpkin, egg, and vanilla.

Beat until light and creamy. Add dry ingredients and mix well.

Bake cookies on a baking sheet for 13-15 minutes.

Let cookies rest on baking sheet for 1 minute.

Remove to a baking rack to fully cool.

In a separate bowl, whisk together powdered sugar, milk, melted butter, and maple extract.

Drizzle the glaze over the cookies.

Cookie:
