Baked Oatmeal With Mixed Berries
Fresh sweet berries are combined with heart-healthy oats, milk, a mashed banana, maple syrup, eggs, and peanut butter in this scrumptious mixed berry baked oatmeal recipe. A perfect make-ahead recipe that will keep the whole family full and energized in a healthy way as they go through their day.
Ingredients in Berry Baked Oatmeal
- 1 ripe banana
- 2 eggs
- 1/3 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/3 cup peanut butter, melted
- 1 1/2 cup milk (I used almond milk)
- 2 1/4 cups oats
- 1/4 cup golden flax meal
- 1 1/2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 1/2 cups mixed berries
- 1 tablespoon almonds (optional, may sub walnuts or pecans or skip)
How to Make Baked Oatmeal with Mixed Berries
The best part about this recipe is that it comes together in the baking dish! No bowls to clean, which is a bonus!
Preheat the oven to 350° F.
Spray a 9×9″ baking dish with non-stick cooking spray. We love coconut spray for baked goods.
Mash the banana with a fork in the baking dish. Add the eggs, milk, maple syrup, vanilla, and peanut butter. Whisk together until smooth.
Add the oats, ground flax meal, cinnamon, and baking powder and stir to incorporate the wet and dry ingredients. Gently fold in the mixed berries, leaving some on top for a pretty presentation. Top with your choice of nuts.
Bake for 30 minutes. Let it rest for 5 minutes before serving.
Serve with a dollop of your favorite yogurt, some extra maple syrup, or a fresh blueberry compote for a healthy breakfast that comes together in just 10 minutes of prep!
