Air Fried Shrimp Egg Rolls

Easy shrimp egg rolls are inspired by Asian take-out, but because these are air-fried or baked, they are healthier than their traditional fried counterparts.

Ingredients

  • 1 lb. Waterfront BISTRO Small Raw Shrimp, peeled and chopped
  • 1 tablespoon Signature SELECT Toasted Sesame Oil
  • 1 tablespoon ginger, minced
  • 3 cloves of garlic, minced
  • 3 large scallions, chopped
  • 1 bag Signature Farms Shredded Coleslaw Mix
  • 2 tablespoons Signature SELECT Reduced Sodium Soy Sauce
  • 1 tablespoon red curry paste
  • 1 tablespoon rice wine vinegar
  • 12 egg roll wrappers
  • olive oil spray
  • Signature SELECT sweet chili sauce, for dipping

How to Make Shrimp Egg Rolls

In a large skillet, heat sesame oil over medium-high heat. 

Add the ginger and garlic and saute for 1 minute until fragrant.  Add the shrimp and cook until almost cooked through about 1 to 2 minutes. 

Add the shredded cabbage mix, soy sauce, rice wine vinegar, and red curry paste.  Stir to combine.  Cook on medium-high heat for 2 to 3 minutes until the coleslaw mix is crisp, not soggy.

Place egg roll wrapper on a clean surface with the points facing up and down in a diamond shape.  Using a slotted spoon, place about 1/3 cup of the mixture in the center, leaving the liquid in the pan. 

Fold the sides in first, then roll up from the bottom into a tight cylinder.  If needed, you can use a little water to seal the egg roll wrapper on the ends.  Repeat until all the egg rolls are filled and wrapped. 

Spray all sides of the egg rolls with olive oil spray and place them into the air fryer basket.  Cook in batches of 5 or 6, depending on the size of your air fryer at 370° F for 7 minutes, turning halfway through until golden brown. 

Serve right away with sweet chile dipping sauce on the side. 

Notes: If you want a little more traditional flavor, you can add 1 tablespoon of hoisin sauce to the mix.  I left it out because it’s higher in sugar. 

If you plan to bake, place the egg rolls on a sheet pan and spray with olive oil spray.  Bake in a preheated oven at 375° for 10 minutes, turning halfway through, until golden brown.
