Skillet Pork in Creamy Mushroom Sauce Recipe

This one-pan easy Pork in Creamy Mushroom Sauce Recipe allows you to have dinner on the table in under 20 minutes. This pork recipe has simple, delicious ingredients and there is no marinating required.

Dinner time can be a chore after a long day of work and kid’s activities.  My goal with this recipe is to inspire you with a meal idea that you can prepare healthfully and quickly with a short amount of active hands-on time in the kitchen.

As a busy mom of three, we have our evenings jam packed with tennis, soccer, dance and play rehearsals, and of course homework, so dinner has to be quick and it has to taste delicious.  20 minutes from prep to table is ideal for me, which is why I love these new skillet meats from AdapTable Meals.  The marinade is already prepared and meat is already cut for me, cutting significant prep time!

How to Cook Pork in Creamy Mushroom Sauce:

I chose to serve the savory pork with the creamy sauce over egg noodles, therefore, I began dinner prep by boiling water for the noodles as that had the longest cooking time for the entire meal.

After getting the water going, I sliced half an onion and sautéed it in olive oil over medium high heat for a few minutes.  I added 3 cloves of garlic, sliced, but you can also use pressed garlic or minced.  I threw in a package of sliced baby portobello mushrooms and a teaspoon of fresh thyme and sautéed until the vegetables were cooked and translucent, about 5-7 minutes.

Remove the vegetables to a plate and add a touch more olive oil to the skillet and add the pork.  I will say that I chopped the pork into smaller pieces as I noticed a few larger chunks in the package and because I wanted everything to cook quickly and evenly, I diced a few pieces of pork a bit smaller so that they were all evenly sized.

Cook the pork for 5-7 minutes until it’s browed and cooked through, then add the mushrooms and onions and stir together.  To finish the creamy sauce, I added 1/2 cup chicken broth and 1/2 cup red wine to the skillet and cooked until it reduced slightly, about 3 minutes.  I then added 1/3 cup of heavy cream to the skillet to create the rich, creamy sauce.  Stir to mix and heat the cream through until the flavors incorporate.  Top with fresh parsley and serve over egg noodles.

If you want more sauce, you can add another cup of chicken broth to the skillet without compromising the flavors or richness of the sauce.

Luckily my kids love mushrooms and can eat them raw all day long so they ate them all up in this dish, but if your kiddos don’t like the texture of mushrooms, then I suggest chopping them before adding to the pan.  The delicious flavor is still there, but the kids will never know it!

The best part is that clean-up is a cinch as well!  One cutting board and one skillet – totally manageable while the kids load their dishes into the dishwasher!

Ingredients

  • 16 oz AdapTable Meals diced Pork in Mushroom & Wine
  • 2 tablespoon olive oil
  • 8 oz sliced mushrooms
  • 1/2 medium onion, thinly sliced
  • 3 garlic cloves, sliced or minced
  • 1 teaspoon fresh thyme
  • 1/2 cup chicken broth
  • 1/4 cup red wine
  • 1/3 cup heavy cream
  • 1 tablespoon fresh parsley for garnish optional
  • salt and pepper to taste

Instructions

  • Heat 1 tablespoon olive oil in skillet and add sliced onions and garlic, cooking for 2 minutes until softened.
  • Add the sliced mushrooms, salt, pepper and fresh thyme to the skillet and cook until softened, about 5 minutes, stirring frequently. Remove onion and mushroom mixture to a plate off to the side.
  • Add 1 tablespoon olive oil to skillet until hot then add diced pork.  Cook until browned and cooked through about 5 minutes.
  • Add mushroom and onion mixture back to the skillet with the pork and add chicken broth, red wine and heavy cream.  Stir together and simmer for a few minutes for the flavors to incorporate.
  • Serve over egg noddles, potatoes or rice.  Garnish with fresh parsley if desired.

While I was recipe testing, I also created a 2nd one-pan meal in under 20 minutes using the AdapTable Meals skillet pork with mushroom and wine.  It’s a one-pan diced pork with potatoes, onions and peppers meal and while my family devoured both meals, my husband and the girls chose the creamy mushroom pork in a vote for which recipe to highlight on the blog, while my son loved the potato and pork recipe better.

For additional inspiration, you can try this one-pan pork recipe with potatoes, onions and peppers.  It’s so easy – I simply diced red bell peppers, onions, red potatoes and gold potatoes into 1/4 inch pieces and sautéed the vegetables until they were mostly cooked through.  I added the diced pork to the skillet and cooked until brown, then added a 1/2 cup of chicken broth, salt, pepper and oregano and cooked until the broth reduced by half  – about 7 minutes.  I topped with fresh parsley and crumbled feta and called it a meal!
