Crockpot Posole Soup Recipe

Posole is warm comfort food at its best! This hearty Mexican-style soup combines pork, hominy, and spices in the slow cooker. At the end of the day you’ll be greeted by the delicious scent of simmering pork and a satisfying meal the whole family will love.

Posole (or pozole) is a traditional soup in Mexico.   This posole is made with pork shoulder or shanks, chile powder, and lots of hominy.

These bold, earthy ingredients come together to create a rich and comforting pork and hominy stew with deep Southwestern flavor. Tender pork simmers slowly in a smoky ancho chili broth, infused with cumin, oregano, and garlic. The hominy adds a signature chew and a hint of sweetness, while the garnishes—fresh lime, jalapeño, and a dollop of sour cream—bring balance and brightness to every spoonful.

 

Ingredients in Posole Soup:

 

3 ½ lbs pork shoulder or sirloin roast, cut into ¾-inch pieces
Tender and flavorful cuts like pork shoulder or sirloin give this dish its rich depth. When slow-cooked, the meat becomes juicy and melt-in-your-mouth tender.

3 (15-ounce) cans hominy, drained
Hominy adds a hearty, slightly chewy texture and subtle corn flavor that balances the spice. It’s a traditional base for pozole-style stews.

â…“ cup ancho chili powder
Ancho chili powder, made from dried poblano peppers, brings a smoky warmth and deep red color without overwhelming heat.

4 cups chicken broth
A savory broth base that ties all the flavors together and keeps the stew rich and comforting. Use low-sodium broth if you prefer to control the salt level.

2 teaspoons ground cumin
Earthy and aromatic, cumin enhances the chili’s flavor and adds a toasty note that complements the pork beautifully.

1 tablespoon dried oregano
Oregano gives a touch of herbal brightness and depth, balancing the richness of the stew. Mexican oregano is ideal if you have it.

7 cloves minced garlic
Fresh garlic infuses the dish with robust, savory flavor — essential for building a strong base.

1 tablespoon kosher salt
Brings out all the natural flavors of the pork and spices. Adjust to taste once the stew has simmered.

1 teaspoon black pepper
Adds a mild kick and rounds out the seasoning.

How to Make Posole in a Slow Cooker

Ingredients

  • 3 1/2 lbs pork sirloin or shoulder roast, cut into 3/4 inch pieces

  • I like a squeeze of lime on my posole and my daughter likes to eat hers with a tablespoon of sour cream.
