Crockpot Posole Soup Recipe

Posole is warm comfort food at its best! This hearty Mexican-style soup combines pork, hominy, and spices in the slow cooker. At the end of the day you’ll be greeted by the delicious scent of simmering pork and a satisfying meal the whole family will love.

Posole (or pozole) is a traditional soup in Mexico.   This posole is made with pork shoulder or shanks, chile powder, and lots of hominy.

 

Ingredients in Posole Soup:

  • 3 1/2 lbs pork shoulder or sirloin roast, cut into 3/4 inch pieces
  • 3-15 ounce cans of hominy, drained
  • 1/3 cup ancho chili powder
  • 4 cups chicken broth
  • 2 tsp ground cumin
  • 1 Tbs dried oregano
  • 7 cloves minced garlic
  • 1 Tbs kosher salt
  • 1 tsp black pepper

Garnishes

  • jalapeno slices
  • lime wedges
  • sour cream
  • flour tortillas
  • tortilla chips

How to Make Posole in a Slow Cooker

Combine all ingredients in a slow cooker.

Cook on high for 4 hours, or low for 8 hours. Stir and serve.

Top with sliced jalapeno, diced avocados, a squeeze of lime juice and flour tortillas or chips for dipping.
