Breakfast Bagel – Bacon Egg Cheese Bagel

Creamy jalapeno cream cheese topped with ripe tomatoes, crispy bacon, creamy eggs and avocado make up this ultimate breakfast bagel sandwich. 

Bagel sandwiches don’t have to be a weekend drive-through thing – you can make them at home for breakfast, lunch or dinner.  A few simple ingredients make up an epic breakfast bagel sandwich that is filling, full of protein, and delicious!

 

Bacon Egg & Cheese Bagel Ingredients

  • 1 everything bagel, toasted
  • 1 egg, cooked how you like it
  • 1 avocado 
  • 1 tomato, sliced
  • Lucerne Jalapeno Cream Cheese Spread
  • 1 slice of cheese, optional
  • 2 slices bacon
  • garlic powder
  • salt
  • pepper

How to Make Breakfast Bagel Sandwiches

Making bagel sandwiches is easy, it’s mostly prepping the fillings and then assembling.  

Cook the egg how you like it  – the girls and I prefer scrambled, hubby and son like it sunny side up and yolky.   This is totally personal preference. 

While the eggs are cooking, toast the bagel and mash the avocado. 

In a small bowl, mash the avocado and add salt, pepper, and garlic powder to taste.  Stir to mix. 

Assemble the sandwich as follows:

  • bottom bagel
  • jalapeno cream cheese spread
  • tomato slices
  • cooked bacon strips 
  • cooked egg
  • cheese if using
  • smashed avocado spread *
  • the top bagel

You’ll spread the mashed avocado on the inside of the top toasted bagel to top the sandwich.

You can mix and match to make your own creation.

Ingredients

  • 1 everything bagel toasted

  • 1 avocado
  • 1 red vine tomato sliced
  • Lucerne Jalapeno Cream Cheese Spread
  • 1 cheese slice optional
  • 2 bacon sices
  • garlic powder to taste
  • salt to taste
  • pepper to taste

Instructions

  • In a small skillet over medium heat, cook the egg how you like it
  • While the egg is cooking, toast the bagel and mash the avocado.
