Cheesy Stuffed Garlic Bread

A perfect side for a hearty salad or bowl of soup, this Cheesy Stuffed Garlic Bread takes just 5 minutes to prepare and 15 minutes to bake.  The result is a gooey, cheesy bread perfect for a family dinner or a small dinner party.

Nothing beats homemade bread, but it’s not practical to make every week.  A take and bake bread from the Safeway bakery is the second-best thing.  You get the aroma of fresh-baked bread, the warmth of the soft bread, and the crusty exterior without the work of kneading the dough or letting it rise.

Safeway has its line of take and bake bread on sale for 20% off this month as part of the November Big Book of Savings.   There are several brands from which to choose including Izzio, Cheesecake Factory at Home, Panera Bread, La Brea Bakery, O Organics, and Signature SELECT bread.

How to Make Homemade Cheesy Stuffed Garlic Bread

Preheat the oven to 350° F.

Melt the butter over medium heat and add the salt, pepper, garlic, onion, and parsley.   Add olive oil and stir to combine.  Remove from heat.

Slice the bread diagonally in 1/2 to 3/4 inch slices, not cutting all the way through the bottom.  Repeat until the loaf is sliced diagonally in two directions.

Mix the mozzarella cheese and parmesan cheese together in a bowl.  Gently opening the cracks of the bread, insert the cheese into the slices.

Brush with the melted garlic herb butter and wrap with foil.

Bake for 15 minutes until heated through.

Serve with marinara, or as a side with your favorite soup, salad, stew or Italian-inspired meal.
