- 4 cups thinly sliced Brussels sprouts (about 2 pounds)
- 4 clementines peeled and segmented
- 1/2 cup pomegranate arils
- 1/4 medium red onion thinly sliced
- 3/4 cup shaved parmesan
- 1/2 cup pecans toasted and chopped
- Vinaigrette
- 1/4 cup extra virgin olive oil
- 2 Tbs apple cider vinegar
- 4 Tbs clementine juice (about 2 clementines)
- 1 1/2 tsp pure maple syrup
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
