Everything Bagel Breakfast Casserole
Everything Bagel and Cream Cheese Breakfast Casserole is a perfect make-ahead breakfast that feeds a crowd! Made with salty sausage, a creamy egg custard, onions, spinach and creamy cheese, served over everything bagels, this is an ultimate comfort food breakfast casserole.

While you can make individual bagel breakfast sandwiches, a casserole is so much easier and is perfect to feed a family with minimal work! As with any breakfast casserole with bread, it’s best to let it sit overnight for the bagels to soak up all the creamy custard.
If you must bake it right away, just try to ensure each bagel cube is coated with the custard before baking, otherwise, the bagels will end up dry from baking.
This recipe calls for an extra sprinkling of everything bagel seasoning, which you can find in the spice aisle from McCormick at your local Safeway.
Ingredients in Bagel Breakfast Casserole
I used a 10×13 baking dish.
- 1 lb. breakfast sausage
- 1 large onion, diced
- 4 everything bagels, sliced into 1-inch cubes
- 10 large eggs
- salt and pepper to taste
- 2 cups milk (whole milk or oat milk are best)
- 1/2 cup cream or half and half
- 1 tablespoon Dijon mustard
- 2 cups fresh spinach, chopped (frozen can also be used)
- 1 1/2 cups shredded cheese (cheddar, Colby jack, gruyere)
- 4 oz cream cheese, cut into 1/4 inch cubes
- 1 tablespoon everything bagel seasoning (optional)
How to Make Everything Bagel Casserole With Sausage
Heat a large skillet over medium heat. Add sausage and cook, using a wooden spoon to break it up into small pieces until cooked through, about 10 minutes. Add the diced onion to the skillet and cook until softened, about 2-3 minutes.
Spray or butter your baking dish.
Slice the bagels into 1-inch cubes and place them into the prepared baking dish.
Whisk together the eggs, salt, pepper, milk, cream, Dijon mustard, spinach, and shredded cheese until combined.
Cut the cream cheese into 1/4 inch pieces and scatter over the sliced bagels in the prepared baking dish.
Combine the sausage and onions with the eggs and stir until combined. Pour the egg sausage mixture over the bagels and stir gently to combine, ensuring each bagel is coated with the custard. Cover with plastic and refrigerate for 2 hours or overnight.
Bake in a preheated 350° F oven for 40 – 45 minutes until golden brown and the eggs are cooked through.
