Fried Egg Avocado Bowl Recipe
Get ready for a new family favorite! Our Fried Egg Avocado Bowl only takes eight minutes to make. All you need is a non-stick skillet, an avocado and some eggs! We recommend serving with pico de gallo or some fresh diced tomatoes and hot sauce.
High in protein and healthy fats, fried egg avocado bowls are perfect for a quick breakfast any day of the week since it only takes 8 minutes to make!
Ingredients in Fried Egg Avocado Bowls
- olive oil
- avocado (not too ripe)
- eggs
- black pepper
Optional Garnish
- fresh tomato
- Pico de gallo or salsa
Cooking Instructions
Slice the avocado in half and remove the pit. Cut each half so it is flat on both sides and dig out a larger hole for the egg to sit in.
Heat olive oil in a frying pan on medium heat. Place the avocado slices in the pan, large opening side up, and break 1 egg into each opening. After about 2 minutes, carefully flip the avocado over and cook for about 3 minutes more. If you want your yolk fully cooked, break the egg yolk before flipping it over.
Sprinkle black pepper over the top, to taste. Serve with fresh salsa or hot sauce, if desired.
