Green Chile Mac & Cheese
The ultimate comfort food, this Green Chile Mac & Cheese is rich, creamy, and exploding with flavor from green chiles. While fresh roasted chiles are best, they are out of season, so we are using a large can of green chiles.
It’s the perfect meal to make with the cheese on sale at Safeway this week. There are two sales – $.94 Lucerne Cheese with a digital coupon and $2.49 Tillamook Cheese with a digital coupon.
You’ll definitely want to shred your own cheese for this recipe and frankly for any homemade mac and cheese as the pre-shredded cheeses have an anti-caking agent in the bag, and that can lead to clumps. We obviously don’t want clumpy cheese – just pure creamy love!
Homemade mac and cheese is so easy to make and very budget-friendly. If you’ve never made it before – you will wonder why you haven’t and never eat the boxed stuff again!
Ingredients in Green Chile Mac & Cheese
- 16 oz Signature SELECT pasta – elbow and penne are the best
- 2 tablespoons Lucerne butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 cup Lucerne heavy cream
- 4 oz Lucerne Monterey Jack cheese, shredded
- 4 oz Lucerne Pepper Jack Cheese, shredded
- 7 oz Signature SELECT canned green chiles
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- salt and pepper to taste
How to Make Green Chile Mac & Cheese
Bring a large pot of water to boil and cook that pasta according to package directions. Reserve 1/4 cup of pasta water.
While the pasta is cooking, in a large pot, melt the butter over medium-high heat. Add the flour and whisk together to form a roux. Add the milk and heavy cream, whisking constantly until smooth.
Add the grated cheeses and stir until creamy. Add salt, pepper, garlic powder, and cumin and stir to incorporate. Add the green chiles and mix until combined.
Add the cooked and drained pasta plus 1/4 cup of the pasta water to the cheese mixture and stir to coat.
Serve with additional grated cheese, if desired.
While I recommended Monterey Jack and Pepper Jack Cheese, you can also use sharp white cheddar for extra flavor.
