Grilled Meat Marinade Perfect for Grilled Chicken or Steak Kebobs

While Memorial weekend is the unofficial start to summer, I’ve had my grill going for weeks and one of my favorite grilled meat marinades for my barbecued meats is a super simple marinade that has just 5 ingredients, and works perfectly for steak, chicken and seafood.  The marinade is simply extra virgin olive oil, lemon juice, oregano, salt, pepper and garlic.  This is one of the only marinades and sauces that I use for grilled meats and veggies because it is so simple and delicious.

I love to grill Chicken and Steak Kebobs which I can pick up at Safeway already prepared by the butcher in my store’s meat department!   Not only are the kebobs super convenient, they are a great value as well!  For just $6.99/lb., you can get a delicious dinner on the table quickly without having to cut your own meat and veggies!

Grilled Meat Marinade

I simply prepare the lemon olive oil marinade and pour onto the steak or chicken kebobs and let the meat soak in all the delicious flavors.  I marinate the steak for up to one hour ahead and the chicken can be marinated overnight or for up to 12 hours.  The acid in the lemon will tenderize the meat and add a fabulous citrus flavor.  The earthiness of the oregano and garlic balances out the tartness of the lemon.  I reserve about 1 tablespoon of the marinade for basting the meat while grilling.  This ensures that you have moist chicken and steak every time.  If I have left over basting marinade, I’ll pout it over the top of the meat while resting.

The steak kebobs come with 6-8 pieces of chopped sirloin steak and 6 chopped bell peppers.  The chicken kebobs come with 4 – 5 large chicken pieces and 6 bell pepper slices.

Grill the steak kebobs over medium-high heat for 7 minutes per side until the meat is cooked, but still slightly pink in the center.  If you like your beef more well done, you can cook it longer, but we don’t recommend it. The chicken kebobs take a bit longer on the grill because the chicken pieces are really thick.  I found that grilling over low to medium heat for 11-12 minutes per side and turning 2-3 times was best for the chicken.

These chicken and steak kebobs would be perfect served over a toasted pita bread with a delicious tzaziki sauce and served with a Mediterranean orzo pasta salad and fresh grilled corn on the cob.

Ingredients

  • 1/2 cup Extra Virgin Olive Oil
  • 1/3 cup freshly squeezed lemon juice (one lemon)
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 tsp oregano
  • 1 tsp garlic powder (fresh minced garlic may also be used)

Instructions

  • Combine ingredients in a small bowl and whisk together until incorporated.  Pour over meat, reserving some marinade for basting meat while grilling
