Loaded Tater Tot Breakfast Skillet

Crispy tater tots topped with cheesy scrambled eggs, crunchy bacon, scallions, and tomatoes make the perfect loaded tater tot breakfast skillet.  Brunch is served!  If only tater tots traveled well – this could be a perfect camping meal, but it will have to suffice as an epic brunch at home

Eggs and potatoes go together like ham and cheese.  Skip peeling your own potatoes and use tater tots as the base of a cheesy breakfast skillet meal. 

Of my three brothers, one is a chef and restaurant owner. He has six tater tot skillet recipes on his menu at his restaurant.  They are all incredibly popular and unique, so  I recreated my favorite tater tot skillet using scrambled eggs to share with you here.   If you prefer a fried egg – that’s cool, there are no rules, skillet meals are forgiving and customizable!

Ingredients in Breakfast Skillet 

I used a small 4-inch skillet, so the ingredients are based on a serving size of one in a 4-inch skillet.  

  • 1 cup Signature SELECT Tater Puffs (about 20 tater tots)
  • 1/4 cup Lucerne Shredded Cheese
  • 2 large eggs
  • 3 pieces of bacon, chopped
  • 2 scallions, chopped
  • 1/4 cup grape tomatoes, sliced 
  •  1/2 avocado, chopped
  • jalapeno, chopped
  • dash of hot sauce, optional

How to Make a Tater Tot Breakfast Skillet

Preheat the oven to 425°.

Place the tater tots in the skillet in a single layer.  Cook according to package directions for 12 to 15 minutes.

Meanwhile, slice the bacon and cook in a large skillet over medium heat until crispy. Transfer the bacon to a towel-lined plate and drain the fat from the skillet. 

Beat the eggs and add to the skillet to scramble. 

Top the scrambled eggs with cheese.

While the tater tots are cooking, slice the tomatoes, scallions, jalapeno, and avocado.

Remove the tater tots from the oven.  Top with the scrambled eggs crumbled bacon, scallions, tomatoes, and avocado.  Season with salt and pepper and a few dashes of hot sauce if you’d like.
