Homemade Peanut Butter Granola Recipe

A decadent homemade peanut butter granola recipe with toasted coconut and chocolate chips.  

Mix up your daily breakfast or afternoon snack with a delicious peanut butter granola.  Perfect on its own in a bowl of milk, or over your favorite yogurt, this peanut butter granola is a budget-friendly way to use pantry staples.  Simple ingredients like oats, peanut butter, honey, cinnamon, vanilla and chocolate chips bring this granola to life.

It’s like eating an oatmeal peanut butter chocolate chip cookie, but better for you because there is no butter or sugar.  Naturally sweetened with a touch of honey, this is a decadent treat for breakfast, an afternoon snack or even dessert!

This is one of my husband’s favorite recipes.  He loves peanut butter and chocolate, so any opportunity to get it combined is a total win for him.

Ingredients in Homemade Granola

  • 3 cups old fashioned oats
  • 2/3 cup peanuts (almonds, cashews or pecans can be substituted)
  • 1/3 cup smooth peanut butter
  • 1/4 cup honey
  • 3 Tablespoons melted coconut oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup flaked coconut
  • 1/3 cup chocolate chips

How to Make Peanut Butter Granola

Heat the oven to 325 degrees F.  Line a large baking sheet with parchment paper.  Do not use wax paper.

In a large bowl, combine oats, peanuts, salt, ground cinnamon, and flaked coconut.

In a separate bowl or large measuring cup, combine peanut butter, honey, coconut oil and vanilla extract.  Microwave for 20 to 30 seconds until smooth and easily stirrable.  Stir to combine.

Combine the peanut butter mixture with the oats and nuts and stir until evenly combined.

Bake for 25 to 30 minutes, watching it closely so that the granola does not burn.

Once the granola has cooled, top with chocolate chips.

 

Serve with milk, over your favorite yogurt, as a topping to a smoothie bowl or as a topping to your morning oatmeal.
